Migas are a Mexican dish with a base that consists of egg and fried corn tortillas. From there, people add all kinds of different veggies, sometimes cheese is added. You cant really go wrong with what you add to the migas.
My mexican grandmother made us migas on several occasions, for us she always had sliced potatoes added to the migas and that was it.
I've added green onion, cheese and peppers to mine in the past and its delicious. Today I'm sharing my grandmas recipe of migas with potatoes. It's such a comfort food for me and my girls love them, they dont eat them with all the veggies though. So I usually just make them with potatoes.

Start with about 4 tablespoons of oil and heat over medium high heat. While pan is heating chop up potatoes. I used 3 medium red potatoes this time. Russet are fine too but usually just one is enough if using.
Once oil is hot add potatoes, generously salt potatoes. I add about 2 teaspoons of salt to the potatoes so they're not bland then i try not to add anymore once tortillas and eggs are added
While potatoes are cooking cut up corn tortillas. I probably used 12 corn tortillas. I really need to get better at measuring for my blogging!
I like to dice mine. I know some prefer strips which is fine too
You dont want to add the tortillas till the potatoes are cooked. You know they're done when they're fork tender. So while the potatoes continued cooking I beat 6 eggs
Add the tortillas to the potatoes once the potatoes are tender. Stir the mixture occasionally till the tortillas crisp up. Once crispy (but not too brown!) Add the egg
Once you add the egg stir as you would scrambled eggs add a pinch of black pepper. Once the eggs are cooked your migas are done!
Do not over cook your eggs/ let them brown this makes the whole dish too dry you're going for fluffy eggs 😊

Ingredients:
4 Tablespoons canola oil
Potatoes either 3 medium red potatoes or 1 large russet potato
12 corn tortillas
6 eggs
2 teaspoons salt
Pepper to taste
Directions:
In a large deep frying pan heat oil over medium high heat
Slice potatoes into bite sized pieces
Add to hot oil,
While potatoes cook cut tortillas, I cut mine into about 1 inch squares,
Potatoes should be for tender or very close to tender before adding tortillas,
Add tortillas,
Stir frequently,
Once tortillas are crisp but not yet browned add beaten eggs.
Stir frequently as you would scrambled eggs.
Once eggs are set add a pinch of black pepper and serve 😋
