It's been getting warm here in Arizona, so I'm trying to get my soup fix in while I can. I will pretty much eat soup no matter the season but typically I will not eat soup when it's over 100 degrees outside, when it gets to 120, forget eating much of anything at all!
First I got 8 cups of water and put into a big pot on medium high heat.
I added 4 chicken bouillon cubes and let the water come to a boil.
While the water is heating up I wash and dice up 3 small russet potatoes. I then add these to the water. If the water is boiling turn heat down slightly to medium, you want the water boiling to cook the potatoes but if too hot the water could boil over.

Next, get a big frying pan, or skillet and heat 2 tablespoons of olive oil over medium heat. While heating salt and pepper 2 chicken breast and cut it up into bite sized pieces. Add these to your pan and let cook. I cook mine for about 4 minutes then flip the pieces to let the other side cook.
While chicken is cooking add a tablespoon of onion powder and a tablespoon of garlic powder to your boiling water.
Now dice up your ham. I had some left over from easter dinner so I cut up about 2 pieces from the ham spiral. You're welcome to use lunchmeat or get the package that's already cubed.
Add the ham to the potatoes and broth,
By now the chicken should be cooked through, if it is place the cooked chicken into the broth.
At this point I taste the broth, ham is salty so is chicken bouillon so I dont add salt until I taste it at the end. If you need a little salt go ahead and add it.
Turn your broth to low heat and let simmer.
Finally take 4 swiss cheese slices and dice them up. Once diced, add to soup slowly and stir.
There you have it. Chicken Cordon Bleu soup. Serve hot with a few croutons on top. I like to serve my soup with a salad on the side.
So yummy, it's one of my kids favorites.

Ingredients;
8 cups of water

2 chicken breasts
1 cup diced ham
2 tablespoons olive oil
1 tablespoons garlic powder
1 tablespoons onion powder
4 slices swiss cheese (diced small)
Salt and pepper to taste
Directions;
Get your water and bouillon cubes in a big pot on the stove over medium high heat.
While water is heating wash and dice potatoes
Add potatoes to broth turn heat to medium
Heat olive oil in large skillet over medium high
Salt and pepper chicken breasts then cut into bite sized pieces.
Add chicken to hot oil
Cook chicken for 4 minutes then flip.
Cut ham into small cubes and add to broth
Turn heat to low
Once chicken is cooked through add to the soup mixture
Slowly add diced cheese to the soup stirring frequently.
Add salt to soup if needed
Serve hot, add croutons immediately before serving.
